Vodka Orange Cheesecake

Last week  I found a bottle of Vodka in the cupboard and decided to use it in some foods and drinks. We had a wonderful long weekend here in Korea, so that gave me some time to experiment with various recipe’s

Today’s recipe is a Vodka Orange Cheesecake. Now be warned, because of the alcohol content this recipe is not suitable for kids. It does however have a lovely citrus infused creamy taste. Its not too sweet but you can add more sugar if you like. It is also really easy to prepare but make sure you have enough time because it needs to chill for about 4 hours to set.

INGREDIENTS

Main

  • 225 g wholewheat biscuits, crushed
  • 110 g unsalted butter, melted
  • 2 shots peach schnapps, or to taste

For the filling

  • 2 oranges
  • 60 ml vodka
  • 450 g cream cheese
  • 225 g whipped cream
  • 3 tablespoons caster sugar
  • oranges zest and grated chocolate for decorations

Use the orange peel to make 2 tablespoons of orange zest. Cut the orange into pieces and soak in a few shots of vodka for 20 minutes. Set aside

Crush the biscuits and mix it with the schnapps and melted butter. Press the mixture down into a cheesecake pan.

In a blender mix the cream cheese, whipped cream and caster sugar together.

Drain the vodka from the oranges and mix 4 tablespoons of the vodka with the cream cheese filling.

Fold the orange zest and orange pieces into the cream cheese filling. Pour the filling onto the cookie crust and refrigerate for 2-4 hours.

Grate some orange and chocolate over the cheesecake and serve!!!
